DOUGH MANUFACTURER COMPARISON (OR RATHER, IT'S NO COMPARISON)

Not all Liège waffle dough is created equally.  You should do your due diligence when choosing a supplier so we welcome you to compare our dough to other manufacturers, especially the Belgian manufacturers.  Most imported Liège waffle dough is made from vegetable oil or margarine and imitation vanilla flavor (vanillin).  Some manufacturers even use butter powder.  We use real butter and real vanilla extract giving our waffles a clean rich flavor with no aftertaste and no overpowering vanilla flavor that comes from vanillin (the chemical that gives a vanilla flavor used in imitation vanilla flavor products).

We love the debate on authenticity.  What is an authentic Liège waffle?  We think it's following the oldest original recipes from the early 1800's and then using the best quality ingredients currently available.   Just because a dough comes from Belgium, it doesn't mean it's authentic or high quality.  It's actually impossible to replicate an early 1800's recipe because the ingredients were different than what is available now.  The biggest difference we feel is the fat that is used to make this dough.  What many street vendors serve in Belgium is actually not very authentic in our opinion.  Most of them use a vegetable oil (rape or palm) based dough and vegetable oil was not readily in the 1800's.  As this dough became mass produced in the last few decades, cheap oil replaced the more expensive butter and what many Belgians now think of as authentic is no longer authentic.  From a flavor profile, anyone knows butter simply tastes better than even the best margarine or oil.  Oil also affects the texture considerably as it makes the waffle very dense vs butter which gives the waffles a lighter texture.  Would you want a croissant made with oil or with butter?  Our dough has real butter and we don't add any additives or preservatives.   This makes them easier to promote to your customers and strengthens your brand.   But most importantly, it simply tastes better.  Of course there are businesses in Belgium that serve a butter based dough which we would consider more authentic than ours since they're using european flour, butter and water, but they are in the minority and you can't get their dough here in the US because they just make it in house for their own operations.

 

One of the biggest advantages we have is our low minimum order quantities (as little as 1 case for 1 day ground shipping).  Most other manufacturers generally require you to buy in bulk (1 pallet which is 40 cases or approximately 5200pcs of dough) meaning you'll likely need an offsite freezer storage warehouse (extra cost and inconvenience).  Most importantly, they only export Liège waffle dough once a month so if you miss their cutoff and sell out, you're left high and dry.   With us, we're based in Northern NJ so our ground shipping reach is all the north east, southeast, and most of the midwest while freight covers us for the rest of the country.   We also ship internationally via reefer freight and via air cargo to places like Alaska.  If you're in a pinch and you're local, we can even deliver this awesome Liège waffle dough the same day or on the weekends.   We strive to make our product and service unmatched.
