WHAT ARE LIÈGE WAFFLES?
THE REAL BELGIAN WAFFLE
(Quick French lesson, most folks probably don't know how to pronounce Liège, a city in Belgium. It's pronounced "lee" + "edge".)
The Belgian waffle, as we know it in the US, is actually an americanized version of the Brussels waffle, a batter based waffle. Pearl sugar waffles, aka Liège waffles, are quite different and are made with a yeast based brioche dough studded with special pearl nibs of sugar that caramelize on the waffle iron as it cooks. They are buttery and chewy soft on the inside while crispy and crunchy on the outside where the pearl sugar hardens similar to crème brulee. They are absolutely delicious and nothing like your typical Belgian "Brussels" waffle. They were invented in the early 1800's so they've been around for a really long time and we've been missing out on their deliciousness.
While Brussels waffles are certainly popular in Belgium as a sitdown dish at cafes and restaurants, Liège waffles are actually the most popular waffle in Belgium as they are made by numerous street vendors for customers on the go. The waffles don't need syrup poured all over them because they have a sweet crust. Street vendors just wrap them in wax paper and happy customers eat them as a treat any time of day. Think of them as more like a pastry. Eventhough purists like their Liège waffles plain, we're in the United States so we love our toppings like strawberries, bananas, whipped cream, chocolate syrup, ice cream, etc.... They're delicious with toppings, but it's also a good business decision to offer them as most people can't resist toppings.
